Marches peasant tradition couldn’t but give birth to unique hand made pasta. Over the centuries this product established itself on an international level but fortunately hasn’t lost its characteristic original features. Marches pasta is also famous in its dry version. Its secret is the bronze wire drawing and the patience during the drying period. The ingredients are durum wheat and eggs in double quantity in comparison with the original recipe. The result is a long kind of pasta called the Angel’s Hair, a very delicate taste and a strong consistency. The home of Maccheroncini is Campofilone. Their hand made pasta is considered a real artistic masterpiece, in August they organise a fair which gathers people from all round the world.
An other typical pasta is the one produced in San Leo. The Tortelli di San Leo is hand made pasta stuffed with spinaches and cheese.
Consistency of Marches pasta is heavenly coupled with the intense taste of traditional sauces: wild boar, goose and wild herbs.
